A new day start with Fajr as per the Glorious Quran

Assalamu Alaikum,   I was informed that beginning the Islamic Day with Magrib is incorrect and that this is a Jewish custom. Asr prayer is the midday prayer that we are commanded to perform consistently by the Holy Qur'an, according to practically all muftasirs. The Day should begin at Fajr if Asr must be the mid-prayer. We first want to define a Yaum/Day in terms of Sharia before discussing when it begins in Islam. It is the time when Muslims perform the five required prayers and the Witr. As you are aware, Witr prayers are permitted up until the azan for the Fajr prayer of the next day. Why can't witr be prayed after that?
